No-Bake chocolate crunch bars

Seriously the best healthy snack treat I’ve made so far!


And all thanks to my hubby because I was trying to make him a healthy treat that was #lowcarb and #ketofriendly!
And something that wasn’t butter or cream cheese based! 😝


ingredients:
  • 1 1/2 cups Lily’s chocolate chips
  • 1 cup almond butter
  • 1/2 cup KNOW maple syrup
  • 1/4 cup coconut oil
  • 1 1/2 cups unsweetened shredded coconut
  • 1 1/2 cups nuts (I used walnuts)

Make it!

1. In a large microwave-safe bowl or stovetop, combine your chocolate chips, almond butter, syrup , and coconut oil. Melt in 30 second intervals until smooth..

2. Add your shredded unsweetened coconut and nuts until fully combined.

​3. Pour your mixture into a silicone mold (or a pan lined by parchment paper) and spread out evenly, using a spatula.

4. Refrigerate/freeze until firm.

​Enjoy!!

protein pudding

This is one of my favorite snacks and can even double as a dessert:)
Ingredients:
1/4 cup plain Greek yogurt (Chobani)
1 scoop chocolate protein powder (NutraStart)
1/3 cup blueberries
1/3 cup strawberries (sliced)
1.5 tbsp almond slices

*Nutrition Info:
210 Calories
8 g Fiber
17 g Protein (~2 servings)
17 g Net Carbs (~2 servings)
7 g Fat (~2 servings)

Note that if you use a different protein powder, your Nutrient info will change. NutraStart contributes 9 g protein and 5 grams of fiber per scoop.
Instructions:
1. Measure out Greek yogurt and add protein powder. Mix well with a spoon until all the powder is dissolved. Add a splash of water if needed.

2. Stir in fruit, top with almonds and enjoy!

3. To enjoy as a dessert, freeze the protein pudding for at least 30 minutes then add fruit & almonds.
